Chicken strips with eggplant and onions are an easy and tasty dish that combines a main course and side dish in one preparation.
Tender and creamy, the result is a healthy and flavorful alternative to the classic grilled chicken that, let's face it, tires everyone out after a while.

I prepared this recipe with this very good quality nonstick frying pan.
Proceedings
1 Done | Wash the eggplant and cut it into cubes |
2 Done | Coarsely chop the onion |
3 Done | Cook them over medium heat in a high-sided nonstick pan with a lid, with a little water and the oil, adjusting the salt |
4 Done | Meanwhile, prepare the chicken by cutting it into strips and seasoning it with salt and pepper |
5 Done | When the eggplant is almost cooked and creamy, add the chicken and mix well |
6 Done | Continue cooking until the chicken is cooked through. |
