Today I want to share with you a special recipe, perfect to start the New Year with taste and originality. We are talking about lentil meatballs, cooked in an air fryer - a light, tasty and surprisingly easy-to-prepare treat.
Inspiration
I got the idea from looking at the leftover lentils from New Year's Eve dinner. Instead of repurposing them in the usual way, I thought I would reinvent them, turning them into something completely new. And so my air fryer lentil meatballs were born!
Why lentils?
Lentils are an amazing ingredient, not only for their delicious flavor, but also for their incredible versatility and health benefits. These small legumes are a nutritional treasure, rich in plant-based protein, making them a great choice for both vegetarians and those seeking alternatives to meat. Their high concentration of protein helps maintain a feeling of satiety for longer, making them ideal for those on a balanced diet or wanting to control their weight.
In addition, lentils are an excellent source of fiber, which is essential for the well-being of the digestive system. Fiber helps regulate digestion, prevent constipation, and may help reduce the risk of chronic diseases such as diabetes and heart disease.
From a mineral perspective, lentils are particularly rich in iron, an essential component for oxygen transport in the body, and folate, which is important for cell formation and prevention of birth defects during pregnancy. They also contain significant amounts of potassium, magnesium, and zinc, which are vital for various body functions, such as maintaining bone health, regulating blood pressure, and supporting the immune system.
The versatility of lentils is evident in their ability to be incorporated into a wide range of dishes. They can be used in soups, salads, stews and, as in our recipe, made into delicious meatballs. The process
The magic of this recipe lies in its simplicity. I took lentils, mixed them with some ingredients to give them flavor and texture, and then breaded them. Finally, I cooked them in an air fryer until golden brown and crispy. The result? Light and tasty meatballs, perfect to enjoy on their own or accompanied by a sauce.
