Grated apple muffins
A light and very tasty treat that can be prepared in no time and is perfect at any time of the day whether it is breakfast, the end of a meal or a snack
To grate the apples I used a food processor to save time, but they grate easily by hand
Vanilla, lemon peel and/or cinnamon can be used to enhance the flavor
If you have particularly sweet apples, you can reduce the amount of sugar a bit
As molds I recommend reusable silicone ones, alternatively classic paper ramekins are also fine.
If you don't have molds, you can also put everything in a pan and make a cake
To help me portion out the dough, I used an ice cream scoop
With my ramekins, I made 18 muffins.
In addition, they can be baked or baked in an air fryer
Enjoy your meal and remember Always Loaded and Motivated!

Instead of butter, can I add extra virgin olive oil? In what quantities?
Olive oil no, too strong flavor would ruin the recipe. Maximum of seed oil, 40g
